Ingredients:
1 cup semolina (or any grain of your choice, such as wheat or rice)
1/2 cup ghee or oil
1 cup sugar
2 cups water
1/2 teaspoon cardamom powder
A handful of chopped nuts (such as almonds, cashews, or pistachios) and/or raisins (optional)
Instructions:
Heat the ghee or oil in a large heavy-bottomed pot or pan over medium heat.
Add the semolina and stir constantly for 5-7 minutes until golden brown and fragrant.
Add chopped nuts and/or raisins (if using) and stir for another minute.
In a separate pot, bring water to a boil and add sugar and cardamom powder. Stir until the sugar dissolves and the mixture becomes syrupy.
Slowly add the sugar syrup to the semolina mixture while stirring continuously to prevent lumps.
Reduce heat to low and continue to stir until the mixture thickens and starts to pull away from the sides of the pot (about 10-15 minutes).
Remove from heat and transfer to a serving dish or individual bowls.
Garnish with additional chopped nuts and/or raisins if desired. Serve hot or at room temperature.
